I've been lurking a short while doing some research and decided this could be a good home for me.

I've been grilling since I was a teenager but back then my parents wanted everything well done - not that I knew any better at the time.  Years later, I began to appreciate how much better properly cooked steaks and other foods could be.  I've done pretty well on both charcoal and gas grills.  I know - a lot of people consider a gas grill blasphemy, but successful grilling is more technique than anything.

My first smoker was a Brinkman that I used until it fell apart.  Next, I bought an NBBD and used it a lot for several years until I needed something a little bigger and got an OK Joe Longhorn.  The OKJoe has worked great, but I recently had some mods done - FB deflector, tuning plates and charcoal basket.

I'm looking forward to learning more from all you guys and gals!
  2. Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Check out Jeff’s 5 day smoking E-Course ( link below ) that will help you get started.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

  3. Glad to have you join in. I know what you mean about parents having this cooked well done. I think the redder the better on a steak myself. Now love smoking meats and the great ways you can change a piece of meat like brisket for one with different woods and seasonings. Good luck and keep smoking.
  4. Hey B, glad you joined up and a big hello and welcome from East Texas

Thanks for the welcome, folks!  The talent here is amazing.  I'm sure this old dog who knows a fair amount about smokin' and grillin' will pick up a lot of new information here - already have!!!
  6. Hey! You are from my neck of the woods. I am from Miller County. I am also new to this forum...been lurking a while! There is a lot of information here that is unconventional to the way people do it in South Ga. I have found the stuff I have learned thus far to be invaluable. Welcome Aboard!

Howdy neighbor!  Maybe we'll run into each other sometime - but not too hard!

Unconventional?  That's the best way, isn't it? [IMG]
