Just found the forum, yum! Am a long time smoker / bbq er. Moved to AZ from Colorado, and left my stick burner there. Got a new kamado joe (large size) in July. Use it at least 3X / week. Brisket / chicken specialities. Looking forward to a turkey on the joe for thanksgiving.

Have a question for the forum. Has any one done an over night stew (a cholent for the MOTs) on their smoker? Thinking 12 to 18 hours. Thinking about times, temp, etc.

PS and tip to share; to avoid brining a bird, buy a kosher one. It is essentially brined already. Saves time and fridge space.

Welcome. It's great reading here even for just something to do.
I made brisket stew and chili on the smoker . It only goes up to 8 hours or so, not much longer.
I did mine in stages starting with the meat then onion and celery with garlic. Added beef stock to those and cooked those 2 hours before adding more vegetables and potatoes. Thickened sauce and added some last minute stuff. Not much chance it could go overnight without turning everything to mush.
It was good stuff though.. brisket Cooke tender in it.

Cooker welcome to the forum, I read your thread twice and still didn't understand what you were asking. I finally did a Google search. I haven't done a full stew on the the smoker, but have smoked the meat and veggies then added it to the stew. Hope that helps.

What I’m looking for are tips / tricks for a cholent on the smoaker. A cholent is an overnight stew make by sabbath-observant Jews to have a hot lunch on the sabbath with out lighting a fire. Also goes by various names depending where your grandparents were from, ie, dafina, hamim, etc. in the old country they were put in the falling oven of the village baker on Friday before night and eaten for lunch on Saturday. I was thinking to replicate that falling oven in my joe.

You could build a pit and build a big fire in it with a stack of wood on a bed of river rocks. When the wood turns to coals You put your pot on the coals and cover the pot with a sheet of tin. Then you fill the pit back over with some dirt you dug out. It will be hot for a day if you want.
I actually would just do chili and try to keep the Joe coals going for 12 hours or whatever.. use a minion of a few coals stacked and rest a lit coal on top of each stack to burn slowly down to the last coals.

Maybe you use lump KJ or RO?
You pack it up to the fire ring or deflector and can get a 12 hour burn I imagine..

I actually like that idea, but I think I’ll just stick to the KJ .
