Hi. I'm Keith and I live in PA. I just bought a MES 30 and am looking to learn how to use my smoker for all kinds of meats. I make my own rub and BBQ sauce. I never use commercial sauce anymore :).
 
Hello Keith and welcome to the fun.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  The trial and error method works well.  We will try to help you keep the errors to a minimum since we already made them for you.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Welcome Kieth, I too have an MES30 and came here for a re-indoctrination plan. I decided these folks rated a bit more investigation and I believe I have fell in with a bunch of smoke addicts!

The Big Guru's will be along to help with you acclamation, in the mean time let me rant .... please. The search engine is unbelievable, it won't tell you how to get your garage painted free, but other than that its pretty dang smart. The local Guru's have forgot whats not important so that only leaves one thing besides the occasional BS to come out there mouth. The people are friendly but never feed 'em after dark or they will never go home again. if and when you need help, the more specific the better the answers will be. Last but not least, take notes, like a snipers kill book. Each smoke what you did, what you liked, what you want to change. It was be a shame to do the perfect smoke and not remember what you did. Also you are going to see so many inspirational smokes that it will be years before you can try 'em all, I mean who ever heard of smoked deviled egs?

If you have smoked before, which I assume you have by your sauce comment, if it wasn't an electric its not the same. But that's for when ya get past the Guru's and their formal intro, and don't worry about the sheep, its not his initiation.

If I can help, and ya don't see me, drop me a PM. BTW the only thing I don't like so far with my MES30 is that I didn't get the bigger 40!
