Hello all, I'm a new member from NC. I have enjoyed smoking various meats over the years like fresh caught or harvested salmon, venison, chickens, turkey, pork, peppers & sausages. I am always looking for better techniques and other recipes. I started a wild game processing business a few years ago and specialized in processed products like Italian sausage, trail bologna & jerky. It was really fun to make all that stuff but I have moved on to better opportunities. I still have some of the equipment to do my own processing. This looks like a great place with a weath of information. I sell firewood, so I always have different types of wood I can try for smoking. I have a verticle electric smoker and a large cooker that I can fit up to a medium sized hog in. It's going to be a good year !!! Glad to be here. The Wood Boss

Thanks All for the welcom, does anyone know how I can add a signature and change my avatar. I can't seem to find the options under my preferences. Maybe it takes a while before new members have those options available, I'm not sure? Thanks
