Hi gang. Build me a wooden smoker last year and have been playing around with butts, chicken, ribs, and deer roast. Enjoying it but the main reason I built it was to learn to smoke my deer sausage. I've been making fresh sausage for a while but was intimidated to smoke some. So I'm ready to take the plunge. This morning I made a test batch of some snack sticks. I was very pleased with the flavor. Wish the casing was a little more crisp. I used collagen 21mm casing and Backwoods seasoning. I'll ask for more tips in another section.
