Hello to the forum!  Just purchased an Old Country Pecos smoker and ready to get after it.  I am new to smoking entirely, but I have used the Weber style charcoal grills for several years.  Brisket, pork ribs, pork butts and chicken are on the menu.  Looking forward to being a part of the forum!

Welcome Jaws.... I have the same smoker and really like it with a charcoal basket I built. Just up the highway from you. You'll get great info and advice on this site. Keep a smokin'. JB

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.
