  1. Hello all, Name is Tracy and I live in Gulf Breeze, FL. I'm an Aircraft Mechanic for the Air Force. I have pretty much no knowledge when it comes to smoking meat, but can't wait to learn. I bought a Char Griller Duo a couple years ago and have only used it for the normal grill operations. I love smoked meat and have always wanted to learn the art. Yesterday I bought optional side smoker box for my grill and will be installing it tomorrow. A buddy of mine already has the same setup and has produced some amazing meat. My plan is to learn as much as I can on this setup before eventually getting a better/separate smoker. If you have a advice pertaining to the side smoker box for the Char Griller Duo, I'd love to hear it. Any little mods a can do now before I install would be great. Thanks in advance for the help!

Welcome to the forum, we have a few members in the panhandle area and I'm USAF retired. Still work at Eglin.. Great place to learn. I would try and find me some metal to lay across the bottom where the opening is for the fire box make tuning plates. This will give you more even smoke and heat across the entire surface of your grill. Much like a Rick Klose smoker.
  3.   Welcome to the forum, Tracy. I can't help with your Char Griller but still wanted to say hello. Sounds like your buddy can get you a pretty good start since he's turning out great chow already.

Good luck with your new addiction.
