Hey all.  I'm Jason from mid-MIchigan; I just received a new MES 30 (I think gen 2) for Christmas... been wanting a smoker for a while, so my brother and mother went and surprised me with one.  I've already got it seasoned, and even without any vent mods (I usually never can leave anything alone...) it produced some very nice TBS (yes, that's right, I read the forum for a while to catch the lingo before posting!) with a handful of Mesquite wood chips.  

I also picked up a bag of Apple chips to do a pork roast later on.  This weekend will be my first smoke.  I'm thinking either country style ribs cut up to make some burnt ends, and/or spare ribs rubbed down nice and good.  Would Mesquite be too much for spare ribs?  I hear it's a pretty powerful wood to smoke with. 

I'm a fairly high level griller, but smoking is new to me.  I'v e already seen some great stuff here on SMF, and am excited for vent mods, mailbox mods, amznps, and some great recipes!  I love bbq, so it'll be great fun to make some of my own for once!
