Good morning all. I'm new to the forum and pretty new to smoking. I built a UDS and live in the Midwest. I have had reasonable success with ribs, chicken, and pork butt, but have shied away from brisket because I don't want to ruin it.
I look forward to learning from you all as I continue on this quest for the perfect smoked meat.

Thanks, Gary. I feel out of place because I'm surrounded by Garys. Is there anyone on here that is not a Gary? Just kidding.

I have some spare ribs on my UDS today and I'm using the 321 method. I'll try to post something later.
