So I've had this beauty sitting in my garage for two weeks as I haven't had time to season it. Until today. I oiled up the inside, put in some hickory and plum and got a pretty good smoke for the first 5 minutes before it settled down. Over the fence, I hear my neighbor coughing up a storm and finally going inside and slamming her door. Now, she was probably 30 feet away and I'm 8 feet away from the smoker and not making a fuss. But, I felt bad. Until I remembered that only time she goes out is to SMOKE (and not in the good way)! So, I gave her some smooth rich flavor for free!
I just finished seasoning when the rain started coming down (again). I took the day off tomorrow just so I could smoke some meat. I'll probably start off with some country style ribs just because they're easy.
Oh, the Masterbuilt manual says "only use chips. do not use chunks". If I do the cast iron skillet "mod" should I be able to use chunks or is there some other reason they say to only use chips?
