ok guys this was my first official smoke with my new masterbuilt xl, overall this smoker is good, like others have said, I am going to replace the wood pan for a cast iron one, aside from that this smoker as it is stock works pretty well.  well, too much about the smoker on with the pics. I need to put some gasket on the door(that's a note to myself lol)

here we have brisket and chuckies rubbed already and ready to go into the fridge overnight.

and All ready to be thrown into the  freezer, bottom is  brisket and top are the chucks (forgot two more bags  from the brisket)

Very nice caiguar!  How do you like the new smoker so far?  I would have loved to have gotten one larger than the MB Smokehouse I have (though it does work well for us) just so I wouldn't have to split large briskets and rib racks.

I love it, I was in the same boat as you.  struggling for space.  I love how easy it is when you have the space.  that was about 20 lbs of meat in there and it looked empty hehehe, loved it.  That was my main goal, to get to throw some meat in there without the worry of space, also because if I going to use gas and wood, I wanted to be with as much meat as possible to be able to save and have Q when I feel like it and no need to power on the smoker in the middle of the week.

Nice Looking Smoker and Great Looking Brisket and Chuckies...  Now all you need is an A-MAZE-N-SMOKER and you will be all set...

Your brisket looks awesome and juicy too. For youe chuckie's you sliced one and pulled one. Now thats cool I just pulled the first one and it was great for I have always just sliced them. Now they are really good sliced but pulled they just give it a different texture and it was a nice change. Pull on my friend. 
 
Hey beer-b-q, I was thinking of that.  Might pass on the cast iron tray and get the a-mns the thing is that this product is intended for cold smoking, will it work on hot and well I was reading that humidity also affects it.  I always smoke hot 225-250 and even higher if Im doing something that needs it, also I always use water to stabilize temps.  will it actually work? will the water affect it or the hot smoker?  now just need to figure out where I could place it inside the smoker, the big version or the smaller one.
