Smoking and Q'ing for a long time now but always looking for something new to try. Retired from the Marine Corps and now I can do more of what I like to do best, making bellies grow!!!!
Working with a small brinkman right now due to having to live in an apartment for the time being. Have enjoyed the big custem smokers, NC pig cookers and so forth over the years. Looking at buying a big custom pit next year but still considering some options of catering vs. pleasure, rotesserie vs. pit, and of couse size and money will be the big factors.
Got (6) biskets in the frig now savorying up a little blend, some chickens stepping all over their special blend, got the sauce made for each, and the beans are just about done. Will fire the pit (one I have not even seen yet) around 4 am and feed about 65 people around 6 tomorrow. They want smoke so it is going to be a long day.
Favorite items, ribs, brisket, carolina pulled pork, crawfish boils and of course those simple but delicious quail eggs.
Happy cooking to all this weekend
I am out of Dallas Tx
