Hi everyone Im new to this forum and jerky making. I am starting on beef but I have an nice selection of exotic meats in my city. I want to make some Alligator and Kangaroo jerky but I am having no luck finding recipes. Can I just use a regular beef recipe? I feel like Id be wasting that meat with just a regular salty or peppered recipe. Please help!

I have tried Roo and Emu Jerky many times and I think that they lend well to most beef recipes. Gator, on the other hand, I think should maybe treated like turkey or pork. I have wanted to try gator in sausage and jerky but don't have a good source for the meat......yet......
