Hi there my name is Jamie. I live in Toledo,OH. I have enjoyed cooking since I was a little kid. I'm 21 years old now and I have plenty of grill experience under my belt but I have only recently been introduced to smoking foods. My neighbor gave me one bone off a rack of baby backs he was smoking and let me say I was floored. Since then I have decided I want to get my own smoker and I figured I would come here for some advice.

I think I'm going to jump right into using an offset smoker. There is one at walmart for 89 bucks by char broil. It is rather small but seems to actually be decent in quality. I'm pretty sure that will be what I go with but I do have some questions. (Charbroil American Gourmet). Will this smoker have enougth room to do 4 racks of ribs ? I will primarily use it to smoke chicken wings and 2 racks of ribs but if I have a guest over it might be good to know I have enough room for a third person.

I grew up in Toledo.

Graduated from Sylvania H.S. in 1963.

Been in Florida since 1970.

If the ribs don't fit, just get a rib rack.

I was looking at a smaller one when I bought my first smoker earlier this year but as I imagined putting different foods in it I decided to get one step up in size and I have not regretted it.  A small increase in size will largely effect your cooking area but will not likely affect your wood usage much.  I also went right into a traditional horizontal offset one but after talking to people about "cold spots" I purchased a convection plate for it and it works great at keeping the temperature even from side to side.  I have also heard of people having success with using water trays close to the firebox for this same purpose.  I think there is a way to enjoy almost any smoker you can get your hands on, just be patient with learning the tricks and read lots on SMF here.  Enjoy!
