New in North East TN

  1. Hello all,

    Been looking around here and it seems like a nice place. I'm an experienced smoked meat eater but absolutely new to trying it myself. I'm near Bristol and was recently in Knoxville and had a killer brisket sandwich at Smoking J's on Rutledge pike. Started thinking on the way home about trying smoking myself. Man, the information here and other places is overwhelming.

    I have gathered most of the stuff to build a 30 gal UDS. My work is in my metal shop so I shouldn't have any problems getting it together, other than time. I'm also considering an electric unit since I kinda like the set and forget aspect. Thoughts? Also considering a remote thermometer set up for the UDS, again guidance appreciated. Reviews are confusing since they seem to be the greatest thing ever to some and junk to others.

    We're glad to have you. The search bar at the top is your most valuable resource here. This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).
    Please be sure to post your smokes along with your process and recipes. We will be glad to help you along the way and we may also learn something new ourselves in the process. Also, don't forget the very important Q view! (We're mad for pics on here 😁)

  3. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...

    Welcome from SC, Damascus. I'm sure you will enjoy this site. There are lots of folks here with tons of experience who are always eager to share ideas, tips, recipes or anything else that you might need. All you have to do is ask. I would think that a 30 gallon UDS would work good because it's not too big. After that, I would look at an offset stick burner. It's not set-n-forget, but it's a lot of fun to play with. IMHO, it also gives the best flavor. Good luck and good smoking. Let us know how your selection process is coming. Joe
  6. Thanks for the warm welcome.

    Quick photo to show some of the raw materials I have gathered so far. Will start a thread in the UDS section as I get further along, if I can remember to take some photos. Got to decide if I'm using the bought grills or making them from the ss mesh I had in my working scrap pile. Will probably make the coal holder from the rusty negative cut-out sheet.
