Hello all, Been looking around here and it seems like a nice place. I'm an experienced smoked meat eater but absolutely new to trying it myself. I'm near Bristol and was recently in Knoxville and had a killer brisket sandwich at Smoking J's on Rutledge pike. Started thinking on the way home about trying smoking myself. Man, the information here and other places is overwhelming. I have gathered most of the stuff to build a 30 gal UDS. My work is in my metal shop so I shouldn't have any problems getting it together, other than time. I'm also considering an electric unit since I kinda like the set and forget aspect. Thoughts? Also considering a remote thermometer set up for the UDS, again guidance appreciated. Reviews are confusing since they seem to be the greatest thing ever to some and junk to others.
