The Triad of NC
I'm a beginner when it comes to smoking.

I started with a Kenmore smoker that had to be replaced due to a leaking regulator. For some reason, there was no replacement part to be found by Sears.

I now have a Smoke Hollow #6. Using it for the first time this weekend.

Before the Kenmore quit, I was able to get a few things fixed - cornish hens, chickens, country style ribs, brats.

Being here in NC, my ultimate goal is to make my own barbecue.

Well you've come to the right place. As was said before, sign up for the free 5-day e-course. Then pop into a room and post whatever questions you might have. Lots of great people around here with tons of quality information.

Being in NC you sure have a lot of competition for BBQ everywhere you look, but now you know about something that many of them do not, the smoking meat forums. Before you know it they make stop calling it NC style BBQ and start calling it seandje style

Welcome Sean.... Glad you found the SMF. There are a lot of good folks willing to help us newbies anyway they can as well as a wealth of information. Be sure to check out the 5 day e-course as it is a good starting point.

Don't forget to season that new smoker prior to firing it up this weekend.

I'm from the Triad area.

By the way, the ribs were delicious this weekend. They were eaten so fast I didn't think to get a photo. The highlight was when my 4 year old said, in between bites, "I love your ribs, Daddy". Couldn't have been any happier after that.
