Thought I would introduce myself to the forum.

Just married 7 months ago and my wife surprised me with a Char-Broil smoker with off-set fire box for our first Christmas.  I think she picked up on my love for BBQ on a trip through Missouri last fall. 

Eating it is the extent of my experience, so I am very much a rookie.  The snow has finally melted and the weather decent enough to assemble it this weekend and I'm anxious to get started.

Looking forward to taking advantage of everyone's experience to turn out some tasty BBQ of my own.  Any advice for a rookie is appreciated, including a good cooking project to start with.

Welcome to the Smoking Meat Family. Congrats on tying the knot and 'grats on the smoker too.

If you want something fairly quick, go with chicken. You can smoke them at a higher temp than the typical "low and slow". Plus they are fairly inexpensive.

If you want to go with the "low and slow" get a pork butt.  Butts are really forgiving if you experience heat spikes.

Smoked meatloaf is a fav around my house and you can always toss on a couple of fatties to use as an appetizer.

  2. When posting your smoking adventures be sure to post plenty of Qview (Pictures).

  3. Get a good Probe Thermometer as We Smoke By Temperature NOT TIME.

  4. A good choice for a remote dual probe thermometer is the Maverick ET-732

  5. If you are wanting to get into curing meat, there are many members here more than happy to help and give good advice.

  6. If you are unsure of a procedure ASK, don't ASSUME, It will make your Smoking experience much more pleasant...
