Hey guys, I'm Ben from Birmingham. Married, 2 kids girls, work for the local cable company as a technician. Started smoking a few years ago but still not really good at it. I usually on smoke brisket , but after I'd say 10 or 15 I still haven't developed a good process. Tried ribs one time and didn't have a good experience. Using a Charbroil smoker with a side fire box. Modded to extend the smoke stack down to grill level, heat shield installed to allow smoke up but force heat to far end of smoke chamber. This forumnis awesome. Look forward to exchanging ideas.
