I'm a new member. I live in Western New York. I don't have a smoaker yet, but my son and I are in the process of building an "ugly drum".
Here for advice and tips from all you pros.

Good morning and welcome to the forum, from another hot day here in East Texas, and the best site on the web. Lots of great people with tons of information on just about  everything.

I finally have the uds completely finished. I did a "test" burn with some oak planks that were sitting around. The temp got up to 350 at the start of the test dropped to 200, and pretty much stayed there for about an hour. All of my air inlets were open the whole time. Should it be like that? When I use charcoal will the temp be higher? And lastly, what should my inaugural smoke be?

Firecapt54, congrats on finishing the UDS.  You'll most likely get more responses to your temp questions over in the UDS Builds section of the Forum.

Were you using any water when you did the test or just a dry burn?  Water will keep the temp down.  If doing a dry burn and getting low temps, play with it a few more times before you decide if you need to add more air flow to the fire by adding top and bottom holes.
