from trois rivieres in quebec, always done hot smoking and want to try cold smoking with my little chief, was going to try to put wood chips in pan and startfire without electric element and try to seal as much as possible air intake. and refill woodchips often for a few days, I have a top smoker, and would cure meat before smoking, does this make sense
