Hello all,

New here, wanted to take a second to say hello and I am glad I found the forums. I am a jerky lover! Been making jerky most of my life. The last 15 years I worked in a couple large to medium sized jerky companies, then began making my own jerky at home for a hobby and then as a business. I have a jerky blog that I update daily as well as a podcast all about jerky. I wont post a link right here because that is not why I am writing this however if you want to check it out ( i wouldnt tell you not to do that :-) ) there is a link in my profile.

I am trying to get involved in the conversations around here the last couple days and will more as time goes on. I hope to share recipes and jerky knowledge if anyone cares... haha. Hope I can help, if anybody has any questions or comments for me please send them my way. Thank you and glad to be here.
 
I don't know anyone that doesn't like jerky.

Anyway yea throw up some recipes. I myself am just starting and tackling some more basic flavours while I learn my smoker and how it likes to work.
Last batch was a simple soy sauce, and onion powder mix smoked on redgum dust.
Texture is good, I have to pay more attention to my cutting though.
Anyway I'm always looking for tips and tricks.

Welcome! If you have some ideas or a recipe using wasabi I'd be real interested in that. I tried making a batch but I can't get the wasabi flavor to stand out.

Mike W - Wasabi jerky? Interesting. How did you make this? Did you use wasabi powder or wasabi paste?

I would maybe try something like this to experiment with of course lol

2 lbs beef

2/3 cup soy sauce 

1/4 cup worchestershire

1 tablespoon wasabi paste

1 teaspoon garlic powder

1/2 teaspoon minced garlic

1/4 cup white sugar

1/4 teaspoon black powder

Thats just a rough draft of a recipe. I am experimenting with that one totally!

let me know if you try it and if it comes out ok. 
 
I used wasabi powder and that might have been the mistake mixing it into marinade. I can't copy and paste my recipe but it's titled beef jerky qview in the UK smokers group if you want to see it. By wanting wasabi flavor I'm shooting for that sushi taste of mixing wasabi, soy sauce,and pickled ginger. I think it would be an interesting flavor on jerky if I can get it right.
