Hello and Welcome to the "family". I would suspect that like me most folks don't put coals in the cooking chamber. The rig is used as a smoker and the fire only goes into the firebox. I once did a grill for a large party of kids so burgers and hotdogs were the choice for the day. My offset was the only thing I had that was big enough for the job so the lumpwood went into the cooking chamber and away we went. Then I too ran in to the problem. What I did was allow it to COMPLETELY cool and then hit it with a shop vac. I then did a very light washout with a water hose and soft brush just to get out any ash dust but not hurt the seasoning.
