Not what I was expecting when I opened this up but a nice smoker. That thing should last a lifetime! Do you like the way it cooks? One of my most favorite things about my UDS is that it is a fuel miser. It appears that your fuel door has a good seal based on the photo with it smoking. If so, you will love it. Good Job!
I had no clue how little coal my smoker would consume to stay at 225! I'm used to a cheap brinkmam. So I loaded up to tray and got her going.. Right on into 400°! Oops. I've been keeping a log. On roughly 11-12 pieces of charcoal and a me quite log I get about 2 hours of stable 210-230° heat. I have a cheap thermometer so it's hard to get an exact temp. That's with exhaust all the way open, both intakes capped, and the ball valve 1/3 open. I started at 10 last night, and while this smoker run wasn't stable over the span of the night (I overslept between alarms), I did learn the ropes of this smoker. Its very simple and very predictable.
