New here "greenhorn'

    I`m new here just happened to come across this from amazing bought a Brinkmann gourmet charcoal smoker did some mods to it (added 3 lower dampers to the charcoal pan and 1 on the lid and put some legs on it).Now here comes my questions.I used Wicked good lump for the first time it burned awesome but what do i do with the leftovers?Can I use them in the chimney or put`em back in the pan?Also whats the opinion on soaking smokin chunks or not to soak?

    Welcome to smf.. Yes u can use the leftovers and as far as soaking the wood, u will get a whole bunch of opinions on that,, I personally dont soak mine,,,  Happy smokes  [​IMG]

    Rondar welcome to SMF!

    I have not cooked on a charcoal unit for some time. If I soaked chunks it was only for about 20 minutes. I leaned towards not soaking them at all.

    Welcome to the SMF!  Plenty of great people here willing to help!  As for soaking the chunks, there's not much sense in it since the water doesn't penetrate very far into the wood and then when it's added you get a lot of steam before the wood ever starts to burn.

    Rondar, did you replace or add a quality thermometer to that Gourmet?  What kind of temps were you getting.  I ask only because I just got one for use at the boat club.  I added a two inch therm in the hood and when the factory therm was reading in the middle of "Ideal", the other one was reading 400*.  That was with the single hole in the bottom covered 90%!  The mods you mention are great, but add a new thermometer.

    Don't soak.

You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new prospective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little different to make things alittle better. You will also find alot of good recipes and just plain good ways to do things from the good folks that hang out in here.

    I haven`t got a new thermometer yet from what I saw on the mods site the guy put a thermo on his and just above warm his thermo read 225.I was more towards ideal so my guess my temp was about 300.
