I'm new to smoking. I just wanna make sure i understand the process for smoking cheese. All help is greatly appreciated!

So to start cheese is smoked at 100 degrees or less?

Roughly smoking last 2-3 hrs?

Ill be using an amaz in tube so from what ive been reading there pellets are also great to use?

After 1 hour of smoke does the cheese need flipped?

After smoking process is done do i need to wait for the moisture to draw back into the cheese or can i just take it off let cool for a bit then vac seal?
