Hi folks, BillH here, I've been getting Jeff's emails for a while now but had not joined the forum, but I'm here now. I live in Mississippi and have the following Smokers/cookers.

Trailer mounted Smoker/grill that I use to cook and smoke for our Church as well as family and other friends

New Braunfels offset that's 20 years old but still good

Weber Kettle

Pit barrel smoker, brand new and it's gonna take over most of the small scale smoking (8 racks or less of ribs)

Aussie walkabout, stays on the Motor Home

I had the trailer unit built to my specs. It has a 6'X30"grill surface with a warming rack above. Offset firebox with warming box above.

 the grill is in two sections with a two section reverse flow plate below and below that is an expanded metal grate so that I can use the whole unit as a grill. I can grill 50 ribeyes at a time or 50-60 hamburger patties.

put in the reverse flow plates and I can do at least 12 -16 racks of baby backs or 6-8 briskets or boston butts

Two front mounted propane cookers ( we eat a lot of boiled peanuts) and a wood / charcoal/ cooler box behind the cooker.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
