I have had smokers for 40 years but just bought the 30' digital smoker. I love what I see so far. Did cajun chicken breasts today and they were great but just a little tough. 165 internal cooked on 225 for 1.5 hours and 295 for the last 30 min. Is that a standard for chicken breast. They were moist inside and were very edible but I like a little more on the tender side.
 
You might want to take them off at 158-160. Then rest uncovered for 20 minutes or so. The carryover cooking will bring them up to 165.
