I have been reading the forums for a while now and decided to join. I like the ideas I have found so far. I have been smoking meat for about 10 years now. I started with one of those little smokers that looks like a small rocket. The fire/charcole at the bottom with a pan of water in the middle. Then got one of the side burners and that thing is/was great. Now, my neighbot and I have gained a home built unit that a buddy didn't use. He just gave us this thing. I will post some picts. Looking forward to chatting w/ everyone and happy smoking. I noticed a limit on the pict size... any ideas on makeing them small enough to post? I will read a little and try again. Ok, I have figured it out. The Ribs picture is the my second smoker and it was great for a couple of years. Then everyone found out how good they were and I upgraded to the next cooker. It has sever chickens on the rack. We have receintly add two smoke stacks to the hood and also another rack. I can get 4 butts and 20 racks of ribs on this guy.
