Hello all. New to the site, looking forward to learning more about smoking. I'm from Waukesha Wisconsin, home of the Green Bay Packers and massive tailgate parties. Did a little smoking in the past with a small electric smoker. Now I want to graduate to the old school charcoal. I'm using a home built smoker grill with the heat source off the side like the charbroil type. So far I've done chicken and fish next is a bone in pork shoulder. Already picked up a lot of tips.
