I am an engineer who likes all things food and drink. I have a Weber for grilling, a cheap side box smoker which is what I have been learning on the last 9 years. I also have a cheap and small cabinet smoker someone gave me which I was using for homemade sausage and bacon the last few years.
I have been smoking less each year with kids and more work, so I recently purchased an auber controller, heating element and a Bradley smoke generator in hopes I can automate the process to allow me to eat smoked meats even if I don't have time. If you said I'd go electric a few years ago I would have called you crazy. Well now I have a 4.5 and a 1.5 year old and im going for it :).
My last smoke was a pork shoulder last week, my next will be a small homemade ham from a pig I had an opportunity to butcher (curing in the fridge now).
I don't always have time to do what I want (like anyone), but I prefer to try to make and do things myself simply for the opportunity to learn a bit about how it is done.
I plan to build a cabinet smoker which will house all the electronics so i can leave them outside, and allow for some more space than what I have now. I am hoping to get a lot of ideas from this forum before I finalize what I'm going to do with that smoker.
