I am located in Eugene Oregon and just got a Big Chief smoker. I am a beginner. 

I am trying out all types of items to smoke. Fish, meat, nuts, vegetables, etc.

Fish is my favorite though and so far I have done salmon and scallops. Right now I have a batch of rainbow trout in the brine...

Things I have not yet tried and want to is: Jerky and Eggplant for Baba Ganoush.

I have also doe chicken, hot dogs, ribs, and ground beef.

Most came out good but not awesome.

The scallops were the worst. I put them in brine for 1/2 hour, rinsed them, and then smoked them. They were WAY TOO SALTY!!!!

ALl the Big Chief recipes say that a pan of wood should last about 1 hour. Mine were only going for 30 minutes. I think it was because I got the bags labeled CHIPS and not CHUNKS. I did not notice there was a difference until I went to another store today to get more and they were clearly marked differently. I assume when I use the CHUNKS they will last longer.I am referring to the 3.96 liter bags from Smokehouse (they make the chief smokers).
