Hi, put my first post in and got great info. Was suggested i drop a post here. Am new to smoking, tried a variety of improvised methods with pretty poor results. Picked up a MES 40 along with an Amazen pellet tray. Must say that a bit of decent gear makes all the difference.
Live in the Okanagan Valley in British Columbia, Canada. I work in food manufacturing and have a degree in food science so have been able to follow most of the technical threads but man, do you guys know your stuff - love this process and look forward to sharing my results and learning from all the folks here who are so passionate about this craft.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
