    Hi folks-

I'm brand new to the world of meat smoking.  My wife bought me an electric smoker for Christmas, and so now I have another toy to learn how to play with.

I've run the smoker through the manufacturer's "seasoning" process.  I've picked up some pecan chips, and some kosher salt.  Looking for a nice tasty 1st timer's recipe to break in with.  Any suggestions will be most appreciated.

A litt bit about me -  I'm married, with 3 teen aged daughters.  I work as a Software Engineer for a consulting company in Seattle.  (Like many in this area, I spent more than a few years at that "large sofware company in the Redmond, WA area").  :D  I'm an old Army guy, graduated from West Point back in the '80s but did my time and got out before all the *#(&^ hit the fan.

I kinda have a bad habit of taking hobbies "over the top".  Back in 2002, my wife's sister gave me a little plastic "Mr. Beer" kit for Christmas. Fast forward 9 years, now, I'm a BJCP certifed Beer Judge holding the rank of Master (I actually run a class to teach other beer judges) and am only a few points shy of making Grand Master. (See if you are interested in that kind of thing.  )

Thanks for the site and looking forward to learning and sharing once I come up to speed. Also, anybody has any beer or homebrewing related questions, I'll be glad to help with them, too.

    Thanks, guys.

The smoker is a MasterBuilt 20070511.  Black front, no window.  30".  Not sure about the heating element wattage.  The booklet doesn't say and even the web site doesn't list that model, which I find extremely weird. The temp control goes up to 275F.  I'm going to assume it's a 650 watt element.
