Hey all,
I've been reading on here for close to 6 months, but I'd never created an account. I've always loved BBQ and the process of smoking. Many people in my family have always smoked meat, but up until 3 months ago, I'd never tried to do it myself. I decided it was time to tackle a new hobby. After reading many reviews on here, I bought the "old style" 40" stainless MES from Academy for a smokin price of $299. I read that the old style was much better than the newer version.

My first smoke was a 12lb brisket about 3 months ago. It turned out very well with the knowledge I picked up here on the forum. Since then, I've done more brisket, pork loin, whole chickens, and currently as I type this, I have my first pork butt in the smoker rounding the 12 hour mark. It's currently about 184* IT.

Anyway, just wanted to say hello and thanks.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

That's really cool, glad you found the smoker you wanted, and have successfully researched and achieved tastee rewards. Its how it all starts. Next it will be YOUR secret ingredients, that the family will all want to know. The neighbors will smell smoke and not call the fire dept but instead come bearing gifts of side dishes and deserts (soon they will know your favorites).

Think about it, race car drivers don't enjoy losing a race while learning, golfers don't enjoy continuously looking for lost balls while learning, shooters... buying shells, BUT smokers get to eat all their learning projects. I don't understand why there are not more smokers, but then we'd have to stand in line at the butcher's.

Glad you are enjoying it, and look forward to seeing some of your achievements, I am sure they'll be inspirational!

Welcome to the forums from another Oklahoman!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  When you can't find the answer you're looking for, just ask and someone here will have the answer.

I just started smoking last fall and had limited success until I found this forum. I have learned so much from the kind members. As you have already found out, they are generous with answers to your questions and there are a ton of great ideas in the postings. One of the ways I learned the most was posting my projects with pictures and I always got support, advice and suggestions for differing ways to do things.

I am sure you will love this forum as much as I do.
