Hello my name is Ryan and I am a meataholic. I figured I better make an intro since I have been posting on Gary S's posts.
I'm originally from Iowa but the Air force decided I needed to be stationed in Utah. I've been stationed out here since 03 with a few trips to the sandbox and a year in Korea. I love cooking outdoors and have been interested in smoking for a long time. I have a char griller duo with the added smoke box. I've had this setup for roughly 5 years but for some reason I have been intimidated by smoking meats. Well with adding the dutch oven to my arsenal last year I figured it was time to step up and be a man. I stumbled across this forum when I google searched " what was the easiest meat to smoke". This site came up and a thread of Gary's about pork butt 101. I read that thing over and over. That weekend I made the pork butt and it was pretty good. Had a learning curve with that side of the grill you know simple stuff like the difference between Celsius and Fahrenheit. (225 C is not the same as 225 F)
Anyways Thanks for all the guidance that I've found in here. I also found some modifications I need to do to my smoker to get her working optimally.
