Hello,

I am from East Tennessee and somehow the art of grilling/smoking has escaped me up to this point.  I had a friend buy me a Brinkman charcoal smoker/grill a few years ago and have let it set covered on my deck up until the week before Thanksgiving.  Read endlessly on the internet trying to figure out how to smoke/flavor a turkey.  The test breast turned out fantastic, as well as the whole turkey the following week for Thanksgiving.   I will probably never eat another deep fried or roasted turkey again.  I just got a Weber 22.5 grill for Christmas from my wife and I am elated.  A customer of mine has been bragging about his cooking and smoking on the weber for years.  Now it is ON!  I found this forum trying to figure out how to smoke venison jerky, with which I am in the process of at this very moment.  Hopefully I can pick your brains and get some good info and recipes, and you experienced folk can feel good knowing you introduced someone to the arts  B)

Just pulled the Jerky off of the smoker, and wow, amazing first try, just a little overcooked, I have a paranoia about eating undercooked food  B)  I checked it a couple times and thought "this is done, one more hour"  Maybe next time I will listen to myself.
 
Welcome to the group, and congrats on that new Weber!  You'll find that this is a great place to share ideas on smoking, grilling, etc.  There are plenty of folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.
