Hi all,

My name is Jim and I live in Chula Vista, CA.  I retired from the Navy in 2009 and stayed in SoCal.  I was born in Ohio and raised in South Carolina and Florida (dad was a squid also).  All but two years (Washington) of my 22-year career in the Navy has been here in Southern California.

I recently picked up my first ever smoker, a Masterbuilt Pro dual fuel smoker at Home Depot and have two smokes under my belt so far.  The first was a couple racks of baby backs.  They turned out a little black but tasted awesome!  Then last night I smoked some yellowtail that I brined on Sunday (1 C brown sugar, 1 C kosher salt, 2 C Apple juice, 1 bottle sweet Thai chili sauce).  Apparently I didn't rinse the brine off well enough because it is pretty salty (not too salty that we won't eat it!).

I have a lot to learn and will be a sponge on here for a while!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

because their are so many different ways to make great Q...
