I have been eating BBQ for about 50 years and finally decided to try my luck at smoking my own. I bought a Oklahoma Joe's offset smoker last fall. It's a very heavy duty and serious smoker. I smoked a couple of racks of ribs, which turned out great and then smoked a 12 pound turkey for Thanksgiving. My wife did the traditional turkey in the oven. My smoked turkey was a hit. Since then I have smoked pork ribs, boston butts, beef roasts, vension and chickens. I am experimenting with my own rubs and mop sauces. I spend a lot of time on the Internet looking for new ideas to try. I am keeping a journal so I can learn from my mistakes and perfect my techniques. I will be cooking boston butts on the smoker and burgers and dogs on the gas grill for our fall party in September. Last year we had 109 guests and had a pig on a smoker, not mine. This year I will be doing the smoking. Pulled pork should be easy.

Sounds like you have it down pretty well, I am sure you will pick up some hints and tricks here.
The smoker you have is a true keeper, someday I hope to own one of that quality.

You have gone and done it now! Stumbled into a whole nest of grazed smokers. Next thing you know you will be getting funny looks from your family while you snap pics of the excellent Q you just smoked.

You got yourself a great smoker, and sounds like 50 years of experience to draw on. We will look forward to some fine Q pics....

What part of lower bama are you in?? I'm in the northern part of Mobile County. We just competed in the Hog Wild Festival at the fairgrounds and came in 8th place!

First off welcome to SMF. It sounds like you are well on your way to be an outstanding new member of this fine site. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
