And when I say "new" I mean new as in using a smoker to cook foods and this forum. 

I'm from the northeast so you can say the closest I've come to real BBQ is by watching a throwdown on tv! I'll also take this time to apologize in advance for me asking questions that most of you have answered a million times already. I'll search the forum many times before posting a new thread asking a question like "how do I build a UDS?"
