Actually, I registered on this site quite a while ago, but I never introduced myself. By day I'm an interactive marketer, meaning I spend all day helping people get their Websites to make money. By night, I love to cook. I got into smoking meat about a year ago after a good friend of mine made a brisket that tasted like nothing I'd ever had - and I've been to some really good BBQ places. I decided I wanted to do that as well, so I bought a New Braunfels Deluxe smoker and I've been smoking about every other weekend ever since. I've read every bbq book I can get my hands on and spent many hours at the smoker. I've now got that brisket down, even though my techniques seem to be frowned upon by some that I've read (I like to smoke the brisket for about 3 hours with mesquite, then slather the meat with sauce, wrap in tinfoil and cook at 200 degrees, either in the smoker or the oven, for at least 8 more hours.)

I am thinking about buying an electric or propane smoker and would be looking for advice on that. I also CANNOT get my ribs to turn out. I've tried the 1-2-3 method on this site, and my ribs either turn out too mushy or too dry. No happy medium.

Anyway, I hope to learn alot, and I'll provide my input as well. Here's to good smoking.

Welcome to SMF!!! A good brisket is a good brisket, don't care how ya do it, prefer smoke though.

Ribs are tough to get. 3-2-1 is just a guide, mine are usually 3-.5 to .75 then 1 to 1.5. Ribs need attention, that is what I've learned anyway....and I learned it here.

Welcome Tony. Question! Is the Wylie you're from just south of Abilene? The one Sweetwater plays 3AAA football against? Or is it that other one off in the east there somewhere?
 
Welcome to the site. Glad you found us. I am sure someone will be able to help with picking out an electric or gas one for ya. All of mine are charcoal.
