New guy from Texas

  1. New member from Texas.

    Married with a baby on the way, and recently bought my first house.

    Complete newbie when it comes to slow cooking meat, I've lurked the forums for a little while now and gained some very basic knowledge.

    I have successfully smoked 2 sets of chickens, 1 rack of baby back, 1 rack of spare ribs, and 1 brisket.

    Chickens were by far the best chicken I've ever had.

    The ribs were good, not quite as tender and juicy as I had hoped for, but very tasty.

    Brisket had a similar outcome, I smoked the point and flat all together. with my probe in the point since it is thicker. Just wasn't quite as juicy as I had expected.

    There's a really basic introduction of myself, look forward to improving my cooks and learning from all you guys.

    I actualy cooked some more baby backs today.
    Was meaning to do 3-2-1 method, but I worked nights last night and actually fell asleep and they stayed in the foil for closer to 3 hours. At some point during my nap the vent get pluggwd wuth ashes. When i checked temp it was 185. I quickly opened the vent and opened up my foil to finish them off, they were so tender that i had to leave them on the foil. Got the temp up hot and quickly carmelized the bbq sauce on them.

    They were very tasty, and tender.
    They werent dry, but definitly not as juicy as they could have been. The wife liked them.

    Forgot to mention, i am using a weber kettle.
