Hello everyone,

A friend of mine referred me to this site and all I can say is wow, everything you want to know about smoking is right here. I've been trolling for a while and decided to sign up sine I know have a smoker. I bought my Master Forge Double Door smoker about a 2 weeks ago and Tuesday finally had time to season it. I'm going to be smoking with it for the 1st time tomorrow and I can't wait. I did have a little concern about my smoker. While seasoning it I did notice some excess smoke coming out of the doors. I did read that people have used gaskets to help resolve this problem but didn't quite know what would be the best to use  and where to get them.

For my 1st time I'm going to be doing Pork Butt and Ribs. I have a brine recipe that I thought I would use for the butt to try out which will be molasses, pickling salt, garlic cloves, and crushed peppercorns. I was thinking about adding apple juice and sliced oranges to the water container when I'm smoking to try and give it a little sweetness to it.

I'll post my results when I'm done. But any tips would be well appreciated.
