new guy from St. Louis, MO

    Hi everyone,

    I was pointed to this site from another member. Just started reading yesterday. Found out what I think is my many problems. In short I am doing everything all wrong. So, taking notes and will have to try next time I have a day off of work. All I have to ask right now is to please keep the information coming in. And I will try to assorb it all.

    BTW my smoker is one of those double drums with the firebox being the smaller and lower off of the side of the larger drum. I think it was from Home Depot and went by the name of Austin smoker?

    welcome to the SMF,

     The type of unit you have is a off set or  side fire box smoker .

    There are lots of modifications that you may / can do to this unit that will make your smoking alot easier. The mods are listed in different places in the forums.

    First off welcome Max-Paul to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. Now if you are really new then I would suggest that you sign up fir the 5-day E-course it free and it will give you the basics on smoking and a few recipes too. Here's a link to it:

    then you will have a method to your newly found madness and believe me it will be a madness. Then when you start smoking things you will have to learn how to post the pictures / Qview 

    here. So here's a link to a tutorial on how to post your Qview so we can see what your doing.

    Now the next thing you have to do is run out and get something to smoke. Then just smoke it and if you have any questions just post  them here and we will answer all your questions that you might have. Oh yea there's no stupid questions we were all there in the beginning and we just really like to help others enjoy the fabulous smoked foods that we do. So again

    I cant believe all of the fine folks here and all of the information you all have collected. It didn't take me long to realize that I had been sort of doing the right things last year. But this year I took a nose dive off into the wrong direction. But from what I have read so far and plan to attempt to do this weekend. Well I will have taken a large leap back in the right direction.  Like in past years I would throw on a few chunks of hickory. This year I got it into my head to buy some hickory from the same people who provide my stove wood. So I had it split just like fire wood and then throw on 3 or 4 pieces, on top of the charcoal. That gave it a nice smoked taste, then a few seconds later a bitter tar like taste. I now see I want to go back to just a few chunks and have it good and soaked. Also dont need a lot of smoke to do the job. 

    Again thanks for the welcomes and when I do my next smoke I will take a few pictures. Nothing grand yet like a lot of you, but something to show that I am learning from the masters.

    Welcome to SMF glad you decided to join us. That nasty taste was more than likely creosote and going back to the thin blue smoke (TBS) will get you back on track real fast. If you can barely see the smoke or just smell it you've got it perfect a little goes a long ways.
