Hi all

I found this site while looking for venison sausage recipes, and am fired up about what I've seen so far!  This site is great!

Anyway, I'm 41 and live in Saginaw, MI...about two hours north of beautiful downtown Detroit. 

As far as experience,  I have used an electric Brinkman quite a bit with varied results.  I always have good intentions, but sometimes the product isn't quite there.  I'm worried about the brining process, so I never do it.  That may be one of the reasons. 

I have the parts to assemble a wood-fired double barrel big baby smoker, but need to drag the stuff to the auto shop in the high school where I teach so that I have somewhere dry and warm to work.  Really looking forward to it, though.

Overall, I LOVE to cook and try new things, so I hope to get as much help here as I can.  So far, everyone seems real friendly and welcoming.  Thanks a bunch.

Welcome to the SMF Family...As far as Brining goes, there is nothing to fear and once you do it you will probably not look back...I won't cook a Bird that is not brined!...JJ
