It's pretty rare to find people in NY, especially in the Tri Metro, to be smoking food. Mostly because there is no time and patience. On the other hand, I love my meats to be grilled and smoked. I have the Green egg and I have to say, its a great investment. I am looking forward in reading the forums, especially I am so interested in curing my own pancetta. My costco store used to carry it but they stopped. And now I need to make my own. Hope I can find a good place to purchase my pork belly. :))

Have a large and extra large Egg, great to cook on!
Inquire with butchers on pork belly, they should all know how to cut it but it the realms of life rarely sell it... they would probably be more than willing to cut you some next time doing a pig...
