Hello my name is Phil and I'm addicted to smoked food products.

Found this gem of a forum site while looking for recipe ideas for the new smoker I got a few weeks back for my bday.  I was presented with a new MES 30 electric smoker.  This is the first dedicated smoker I've ever owned and love it.  I've been a busy man smoking everything from ribs to tri tip to these wonderful things called fatties for the family, pics to come in their respective threads. Anyway that's a bit about me, I look forward to learning a lot about smoking food and thank you all in advance.

I lived in New Mexico for many years. Albuquerque and Santa Fe. Loved to fish the San Juan river, upper Rio Grande, Chama River, and the Valle Vidal. Use to hike in the Jemez mountains a lot.

You have arrived at a wonderful forum with lots of good information and people that you can have a conversation with.

Welcome Phil I too have an MES30 and enjoy it.I lived in NM for a time with the cowboys. I was north of Hobbs in the downtown district of Tatum NM. It is ok if you never heard of it, most have not unless you lived in Lubbock and were on your way to Ruidosa to ski, or an honest to buck cowboy.

This place it total awesome sauce. Great people, great search engine, brilliant Guru's. Everything you need to really get inspired.

I suggest you start a log to keep notes on your smokes. it makes my memory Happy because I am not trying to recall so much. If you write what you do, then your suggestions to yourself, its sooooo much easier the next time.

welcome.  fatties cant be beat!  especially if you do a bacon weave.  my wife has become an expert! a real crowd pleaser.  but so is a big pork butt with a perfect bark!  mmmm
