I had a Brinkman charcoal smoker that I retired about 15 years ago and never replaced.  I have been trying to smoke meats somewhat successfully using my gas grill but I needed to take it up a few notches.    I now have a SmokeHollow 44241GW assembled, seasoned and ready to go.   While seasoning the smoker I noticed some smoke leaking from the doors so I installed Lava Rock gaskets on both doors.   I also have Fireboard thermometers configured and ready to go.   All I need to do now is to decide what meat to try first....

Hello Tony,

I am from Middletown in Monmouth County about 45 miles south of New York. 

I smoked some chicken thighs and Italian hot and sweet sausage and I was happy with the results.   Sorry no pictures but I will post some of my next try.
