Hi, my name is Brett from the Cornhuser State. I am relatively new to real smoking but have found it very addictive. I have a trailer smoker/ rotisserie grill which a friend and I built around 20 years ago which we have mostly just used for cooking pork butts and loins and some occasional beef. Not real smoking.
We just recently got into the real smoking action by experimenting with home made refridgerator units.
As avid hunters, our primary purpose was the typical jerky, sausage and snack sticks. I just recently started experimenting with Wild Turkey, Chicken and Salmon and had excellent success due to the knowledge that I have gained from this site.
