Hello, been lurking around here a couple of weeks and decided to jump in the pool. Wife gave me a small Gas smoker for Christmas knowing that I had long talked about building one.After my first attempt I smoked two chickens I was totally hooked. Having bagged some deer after the New Year in South Dakota, actually there were 6 of us and we bagged ten Doe, I knew I had to start making my own sausage. After buying a hog I ended up with about thirty pounds of pork trimming which I ground and two belly's which have about 4 days left in the brine. Yes my smoker is too small to do what i want so.........started this weekend and hope to finish tomorrow my "build" It measures about 54 inches deep, 56 inches wide, and six feet tall. Outside is 4 inch car siding made of pine, inside will be insulated with 2 inch sheets of styrophome and half inch CDX over that. I have ordered a burner from Northern Tool, (Thanks Pops) and have my amazin smoker ( Thanks Todd) it works great. Hopefully by the weekend I can put the belly's in the new house and see what happens. Once I figure out (ask my wife) how to post pictures I will show you what the house looks like.
Other equipment includes a chop-rite number 22 grinder connected to a 3/4 horse moter and an Enterprise stuffer. Which by the way cranks hard as hell when stuffing summer sausage. Great to see all the info on these pages I really love this hobby
