Thanks for the welcome . I'm new to smoking , I"ve    done a little with my weber 22.5 kettle but wanted something a little bigger. So I built my own uds with a weber lid and a homemade draft door (bge style). I haven't quit learned how to set the temp at a good long cook temp yet but I'm working on it.I've been a backyard griller for some time and I desire to master all forms of cooking over or with fire.I appreciate this forum as it gives me endless info and ideas.

thanks again and happy smoking.  Fatso

Boy u guys are great . Hope to learn a lot . thanks again  I do have one question about temp control on something like a weber with an intake and exhaust which do most people use to adjust the temp both vents or one or the other.( bot top and bottom)?

thanks for any input I seem to have a lot of trouble hitting the sweet spot

I have found 2 methods of controlling temps on the Weber. 1st is the amount of coal you lite. I only lite 5-6 brikets and not the entire basket.then bairly crack the bottom vent. As far as the top I only open it no more than the width of a pencil. If you want it hotter then you can open the top slightly. A little goes a long way. There is also a devise call a smokinator that you can buy online. It virtually turns the Weber into a small smoker. Hope this helps. Holla back if you have any more questions.
